Baba Ganoush
I planted 1 eggplant this year. I have never had any luck growing them, but now, here in NC, I grew eggplants!!
I got 4 eggplants so I made my Mom’s Eggplant Parmesan and then I decided to make some Baba Ganoush!
I had not made Baba Ganoush for years – it is definitely clean keto and delicious!
It goes great with Pork Rinds and my PSMF Focaccia!
Baba Ganoush
Great way to use fresh eggplant - Baba Ganoush! It is clean keto / low carb and great to use pork rinds to dip into!

Ingredients
- 2 eggplants
- 55 grams tahini or sunbutter
- 2 TBS olive oil
- 2 cloves garlic minced
- 1/2 tsp salt
- 1/8 tsp smoked paprika optional
- 1/8 tsp red pepper flakes optional
- 3 TBS lemon juice
Instructions
- Peel and cube eggplant
- Coat cubes with olive oil
- Bake in 350 F oven for 30 minutes or until soft
- Remove the eggplant from the oven and smash to a paste
- In a mixing bowl, combine eggplant, tahini, lemon juice,olive oil, garlic, paprika, red pepper flakes, and salt
- Alternatively, you can add all the ingredients to a food processor, but I like to mix by hand
- Mix all ingredients well
- Put into a serving dish and serve
Notes
Goes great with pork rinds, sliced cucumbers, and PSMF Focaccia
