Dairy Free Nacho Casserole

I made a Nacho Casserole the other day and wanted to make a dairy free version since we usually do not eat any dairy.

I actually preferred the dairy free version better – maybe because we don’t eat much cheese as a norm.

This dairy free version is AMAZING!!!

It is a hearty clean keto main dish that everyone will enjoy!

Dairy Free Keto Nacho Casserole

This dairy free version of my Keto Nacho Casserole is absolutely amazing. It has a pork rind crust so it is very low carb. You don't even miss the cheese. It's a hearty main meal that everyone will love!

Ingredients

Crust

Ground Beef Filling

  • 1 lb ground beef
  • 1/2 onion chopped
  • 1/2 red pepper chopped
  • 1/2 green pepper chopped
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp cilantro
  • 1.25 oz sliced black olive
  • 16 oz salsa
  • 2 eggs

Instructions

For the Crust

  • Combine pork rind flour, melted bacon grease, taco seasoning and salt
  • Press mixture in an 8x8" casserole or a pie plate
  • Bake at 375 F for 8 minutes
  • Remove from oven and cool while preparing the ground beef filling

Ground Beef Filling

  • In a skillet, brown the ground beef, onion, and peppers until the beef is no longer pink
  • In a large mixing bowl, combine the beef mixture, eggs, salsa, and spices
  • Mix well
  • Pour onto the crust and bake at 375 F for 30 minutes
  • The casserole will be bubbling so let it cool a few minutes before serving
  • Enjoy!

Notes

You can add more or less of the onion and peppers to suit your taste.
You can also add jalapenos if you like it more spicy hot
