Baba Ganoush
Great way to use fresh eggplant - Baba Ganoush! It is clean keto / low carb and great to use pork rinds to dip into!

Ingredients

eggplants

tahini or sunbutter

olive oil

cloves garlic minced

salt

smoked paprika

red pepper flakes

Instructions
Peel and cube eggplant
Coat cubes with olive oil
Bake in 350 F oven for 30 minutes or until soft
Remove the eggplant from the oven and smash to a paste
In a mixing bowl, combine eggplant, tahini, lemon juice,olive oil, garlic, paprika, red pepper flakes, and salt
Alternatively, you can add all the ingredients to a food processor, but I like to mix by hand
Mix all ingredients well
Put into a serving dish and serve

Goes great with pork rinds, sliced cucumbers, and
