Mom’s Eggplant Parmesan

I loved my mother’s eggplant parmesan – it is not what you would typically think of when you think of eggplant parmesan.

There is no breading and no mozzarella cheese.

This is not a ‘formal’ recipe with exact amounts so I will just type up the instructions.

Ingredients are:

2 eggplants

tomato sauce

Pecorino romano or parmesan cheese

Intructions:

slice the eggplant into 1/4″ slices

brush the eggplant slices with olive oil.

Grill the slices (you can also bake or fry)

In an 8×8″ casserole, layer the eggplant, some sauce, then grate on cheese.

Make 2 layers

Bake at 350 F for 20 minutes
