Keto Nacho Casserole
I saw a recipe for a Nacho Casserole so I decided to ‘ketofy’ it.
It was delicious and a hearty main meal that everyone will love.
You can use my Keto Salsa and Taco Seasoning if you cannot find sugar free alternatives
Since we usually do not consume dairy, I have also made a Dairy Free Nacho Casserole!
Keto Nacho Casserole
Delicious hearty main meal that everyone will love. Made with pork rinds instead of corn chips. It is low carb and clean keto.

Ingredients
For the crust
- 8 oz pork rind flour
- 56 grams butter 2 oz
- 1 tsp taco seasoning
- 1/2 tsp salt
Ground Beef Layer
- 1 lb ground beef
- 1/2 onion chopped
- 1/2 green pepper chopped
- 1/2 red pepper chopped
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 tsp cilantro
- 8 oz cheddar cheese or combo of cheeses
- 2.25 oz can of sliced black olives
- 16 oz salsa
Instructions
Crust
- Combine the pork rinds, melted butter, taco seasoning, and salt
- Press into an 8x8" casserole or a pie plate
- Bake crust in a 375 F oven for 8 minutes
- Remove from oven and cool while preparing the filling
Ground Beef Filling
- In a skillet, cook the ground beef, onion, and peppers until the beef is no longer pink
- In a large mixing bowl, combine salsa, cheese, spices, and ground beef
- Mix well
- Pour onto baked crust
- Bake in 350 F for 30 minutes
- The casserole will be bubbling so let cool a few minutes before serving.

You can use more or less cheese as well as onion, and peppers.
