Keto Cannoli Cookies

I LOVE cannoli.

I have not had a cannoli since I started eating Keto, so I thought I would try these Cannoli Cookies!

They are sooooo good!  They are very delicate and chewy, not crisp so you need to handle them carefully.

I made them with pork rind flour so they are nut free, but not dairy free – yummy!

You definitely need to try them!

Keto Cannoli Cookies

These cookies are absolutely amazing - they are gluten free, nut free, and sugar free. Made with real ricotta and butter. Great for Christmas or any Holiday! They are light and delicate so handle carefully

Ingredients

  • 1/2 cup butter 1 stick, 8 TBS, 1/4 pound
  • 1/2 cup xylitol or any granular keto sweetener
  • 1 egg
  • 1/4 cup ricotta cheese
  • 1/2 tsp vanilla extract
  • 1/4 tsp cinnamon
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • pinch salt
  • 100 grams pork rind flour about 1 cup

Instructions

  • In a large mixing bowl, cream the butter and sweetener with electric mixer until light and fluffy.
  • Add the egg and mix until well incorporated
  • Add the ricotta and mix well
  • Add the baking powder, baking soda, salt, vanilla, and cinnamon and mix well
  • Add the pork rind flour and mix by hand
  • Refrigerate the dough for at least 1 hour
  • Preheat oven to 375 F
  • Line a baking sheet with parchment paper
  • Using a 1.5 TBS cookie scoop (or use a TBS) drop cookie dough onto baking sheet leaving 2" between cookies
  • Bake for 10-12 minutes or until edges start to brown
  • Remove from oven and let cool slightly
  • Remove to wire rack to cool completely
  • Store in air tight container

Notes

Handle the cookies carefully since they are very delicate
