Dairy Free Cream Cheese with Coconut Cream
I miss cream cheese and have been looking for a dairy free alternative.
I will be using this on my Pumpkin Muffins
Dairy Free Cream Cheese with Coconut Cream
Delicious, creamy, dairy free cream cheese and so easy to make

Ingredients
- 1 can coconut cream
- 2.5 tsp lemon juice
- pinch of salt
Instructions
- Place can of coconut cream upside down in refrigerator overnight
- Scoop out the coconut cream and discard the liquid
- In a small mixing bowl, combine coconut cream, lemon juice, and pinch of salt
- Mix well - can use electric mixer if you want but it can be done by had easily
- Pour mixture into a coffee filter lined strainer
- Place strainer over a bowl and let drain for 24 hours - can be left on counter
- Place the drained coconut cream mixture in a bowl and refrigerate
