Dairy Free Cream Cheese with Coconut Cream

Delicious, creamy, dairy free cream cheese and so easy to make

Ingredients

  • 1 can coconut cream
  • 2.5 tsp lemon juice
  • pinch of salt

Instructions

  • Place can of coconut cream upside down in refrigerator overnight
  • Scoop out the coconut cream and discard the liquid
  • In a small mixing bowl, combine coconut cream, lemon juice, and pinch of salt
  • Mix well - can use electric mixer if you want but it can be done by had easily
  • Pour mixture into a coffee filter lined strainer
  • Place strainer over a bowl and let drain for 24 hours - can be left on counter
  • Place the drained coconut cream mixture in a bowl and refrigerate
