- 1 can coconut cream
- 2.5 tsp lemon juice
- pinch of salt
Place can of coconut cream upside down in refrigerator overnight
Scoop out the coconut cream and discard the liquid
In a small mixing bowl, combine coconut cream, lemon juice, and pinch of salt
Mix well - can use electric mixer if you want but it can be done by had easily
Pour mixture into a coffee filter lined strainer
Place strainer over a bowl and let drain for 24 hours - can be left on counter
Place the drained coconut cream mixture in a bowl and refrigerate
