Sunbutter Bread – Keto / Low Carb

I have always wanted to try bread made with nut butter, but I don’t usually eat nut butters.

I made this bread with both peanut butter and unsweetened sunflower butter (sunbutter).

Both tasted really good but I prefer the sunbutter one due to its lower carb count.  However – when I made this with baking soda, the bread came out GREEN

 

Yes – you read that right – it was GREEN while the peanut butter bread was fine.  I made it without the baking soda and it looked fine.  Both tasted great but the look might not appeal to everyone.

Then I thought – how perfect to make GREEN bread for St Patrick’s Day or Christmas.

So, if you want the GREEN bread, add baking soda to the bread batter.

Sunbutter Bread - Keto / Low Carb

This bread can be made with Sunflower butter (lower carb) or nut butter

Ingredients

  • 300 grams sunbutter
  • 6 eggs
  • 1/8 tsp salt
  • 1/4 cup water

Instructions

  • Pre-heat oven to 325 F
  • Mix all ingredients in a mixing bowl - except water- can use a hand or stand mixer
  • Add water as needed to make a smooth batter
  • Pour batter into 9 x 5 greased loaf pan (or use silicon pan
  • Bake for about 1 hour or until the bread is firm
  • Let cool before slicing

Notes

The first time I made this bread, I added 1 tsp baking soda - the bread came out GREEN
This would be good for St Patrick's Day or Christmas, but I would leave it out for normal use.
If using peanut butter instead of Sunbutter, you can add the baking sode.
