Keto Irish Soda Bread

I always made Irish Soda Bread for St Patrick’s Day.

I have come up with a keto friendly version which is also nut free and dairy free.

It is delicious and very low carb.

Keto Irish Soda Bread

Ingredients

  • 1 1/4 cup pork rind flour
  • 2 TBS egg white powder
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp xantham gum optional
  • 8 drops liquid stevia
  • 1 tsp caraway seeds
  • 1/2 TBS apple cider vinegar
  • 2 large eggs
  • 2 tsp hemp milk or any dairy free 'milk'

Instructions

  • Preheat oven to 350 degrees F
  • Place parchment paper on baking sheet
  • In a medium bowl, add the dry ingredients (including caraway seeds) and blend well making sure there are no lumps
  • Add the remaining ingredients and blend well with a spoon until the mixture is completely blended
  • Taste for sweetness and adjust if needed
  • Place the dough on the parchment paper and pat and shape into a round loaf
  • Unsing a knife, cut an "X" into the dough about 1/2 inch deep
  • You can sprinkle caraway seeds on the top if you want more carraway flavor
  • Bake 25-30 minutes or until golden brown and a toothpick inserted in the middle comes out clean
  • Allow to cool at least 20 minutes before slicing
  • This bread is actually better the next day

Notes

You can add some raisins if you are not strict keto.  I sometimes use 1 oz raisins cut in half.
