Keto Shortcake
I love strawberry and blueberry shortcake.
I altered my Cinnamon Bread to make it into a shortcake.
I added a teaspoon of vanilla extract and less cinnamon.
Instead of putting in a loaf pan, I spread it out on a parchment paper covered baking pan.
I baked it for 20 minutes in a 325 F oven.
Once cooked, I turned off the heat and left in in the oven for 20 minutes.
Once completely cooled, I cut it into 8 shortbread pieces.
Then I made a Strawberry Shortcake with it.
SOOOO GOOOOD!!
Keto Shortcake
This is a version of my Cinnamon Bread that I made into shortcake.

Ingredients
- 6 egg whites
- 27 grams egg white powder
- 1 tsp gelatin
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- 1/4 tsp Better Stevia English Toffee
Instructions
- In a large mixing bowl or stand mixer, combine all ingredients
- Whip until stiff peaks form.
- Spread out on a parchment paper lined baking sheet - about 1 inch thick
- bake at 325 F for 20 minutes
- Turn off oven and leave in oven for 20 minutes
- Remove from oven and let cool completely
- Cut into 8 pieces
