Keto Italian Meatballs

I love meatballs – the way my Mom used to make them.

I haven’t been able to recreate a clean keto version until now.

They taste pretty close to Mom’s. but nothing ever tastes as good as when she made them.

She used to soak bread in water for her meatballs and I just couldn’t figure out how to recreate that and still remain clean keto.

I used my focaccia as a bread substitute and it worked!

Keto Italian Meatballs - Just Like Mom's

I ketofied my mother's meatball recipe and it is very close to hers. It's the real deal and clean keto / carnivore!

Ingredients

  • 1 lb ground beef
  • 1 egg
  • 1 tsp garlic powder
  • 1 tsp oregano
  • 1 tsp basil
  • 1/2 tsp salt
  • 1 tsp black pepper
  • 1/6 Focaccia recipe

Instructions

  • Soak the focaccia in water
  • Squeeze all the water from the focaccia
  • In a mixing bowl, combine all ingredients
  • For into balls by rolling between your 2 palms
  • Place on baking sheet
  • Bake at 350 F for 15 minutes
  • Place meatballs in tomato sauce or beef broth and heat
  • Serve!

Notes

Grated Pecorino Romano cheese can be added if not dairy free
The meatballs can be fried or baked.
