Dairy Free Panna Cotta

There was a discussion in our Precision PSMF weekly meeting where people were asking about Panna Cotta so I just had to make a keto version – dairy free too!

This is such an easy dessert to make and tasty too!

It can be made with or without dairy – just substitute heavy cream for the coconut milk.

I chose not to use molds and unmold for serving – instead, I used glasses that could be used to serve it in – much easier too than unmolding!

Dairy Free Keto Panna Cotta

This version of Panna Cotta is clean keto as well as dairy free. Topped with berries, it is a refreshing dessert!

Ingredients

  • 13.5 oz coconut milk about 2 cups
  • 20 grams xylitol or any keot sweetener - adjust to taste
  • 1 tsp vanilla extract
  • 2 tsp gelatin

Instructions

  • Pour coconut milk in small sauce pan
  • Sprinkle the gelatin over the milk
  • Let bloom for 5 minutes
  • After 5 minutes, whisk the gelatin and coconut milk until the gelatin has dissolved
  • Add the sweetener and vanilla extract to the milk mixture
  • Heat the milk mixture but do not boil - heat enough to get the gelatin activated and dissolved
  • Pour into serving dishes
  • Refrigerate for at least 4 hours
  • To serve, top with berries

Notes

For a Panna Cotta with dairy, substitute heavy cream for the coconut milk.
I used vanilla flavored Better Stevia instead of the xylitol.
You can use any sweetener you want.
The mixture can be poured into ramekins after heating and unmolded at serving time.
