Dairy Free Keto Panna Cotta
This version of Panna Cotta is clean keto as well as dairy free. Topped with berries, it is a refreshing dessert!

- 13.5 oz coconut milk about 2 cups
- 20 grams xylitol or any keot sweetener - adjust to taste
- 1 tsp vanilla extract
- 2 tsp gelatin
Pour coconut milk in small sauce pan
Sprinkle the gelatin over the milk
Let bloom for 5 minutes
After 5 minutes, whisk the gelatin and coconut milk until the gelatin has dissolved
Add the sweetener and vanilla extract to the milk mixture
Heat the milk mixture but do not boil - heat enough to get the gelatin activated and dissolved
Pour into serving dishes
Refrigerate for at least 4 hours
To serve, top with berries
For a Panna Cotta with dairy, substitute heavy cream for the coconut milk.
I used vanilla flavored Better Stevia instead of the xylitol.
You can use any sweetener you want.
The mixture can be poured into ramekins after heating and unmolded at serving time.
