Keto Cinnamon Streusel Coffee Cake
This amazing Keto Coffee Cake is nut free, flour free, and dairy free! Very low carb and delicious too!

Ingredients
Cinnamon Filling
- 50 grams xylitol or sweetener of your choice
- 1 TBS egg white powder
- 1 tsp cinnamon
Streusel Topping
- 100 grams xylitol or sweetener of your choice
- 120 grams pork rind flour
- 2 tsp cinnamon
- 113 grams bacon grease or butter if not dairy free
Cake
- 6 eggs separated
- 62 grams xylitol or sweetener of your choice
- 30 grams egg white powder
- 1 tsp vanilla
- 1 tsp gelatin
Instructions
Cinnamon Filling
- mix all ingredients in a small bowl - xylitol, egg white powder, and cinnamon
Streusel Topping
- In a medium bowl, combine xylitol, pork rind flour, and cinnamon
- Add the room temperature (or cold) bacon fat and combine with your fingers until you have a crumbly mixture
Cake
- In a medium mixing bowl, beat the egg whites to a stiff peak
- In a mixing bowl beat egg yolks with a hand mixer until they become light and pale
- Add the xylitol and continue beating until the mixture becomes light and cream colored
- Add the vanilla, gelatin, and egg white powder and beat until completely mixed.
- Fold the egg whites into the egg yolk mixture until they are completely combined
- Pour 1/2 of mixture into an 8” cake pan
- Spread cinnamon filling over the cake
- Pour remaining cake batter into the pan
- Top with the Streusel Topping
- Bake 350 for 20 minutes or until tooth pick comes out clean
- Remove from oven and cool
