In a medium mixing bowl, beat the egg whites to a stiff peak
In a mixing bowl beat egg yolks with a hand mixer until they become light and pale
Add the xylitol and continue beating until the mixture becomes light and cream colored
Add the vanilla, gelatin, and egg white powder and beat until completely mixed.
Fold the egg whites into the egg yolk mixture until they are completely combined
Pour 1/2 of mixture into an 8” cake pan
Spread cinnamon filling over the cake
Pour remaining cake batter into the pan
Top with the Streusel Topping
Bake 350 for 20 minutes or until tooth pick comes out clean
Remove from oven and cool
