Keto Carrot Cake

I was asked to make a Keto Carrot Cake so here it is!

Make sure you have fresh carrots that taste good.  Bland carrots will make a bland cake.

I made a 2 layer cake, but it might be better to make 1 layer instead of 2 thin cakes.

I would also add some pineapple extract to give it the extra flavor.  In my video, I did not add this because I didn’t have any.  My next one will have pineapple extract.

Since we like to be dairy free, and carrot cake calls for cream cheese frosting, I made Keto Goat Cheese Frosting.  If we have dairy, we prefer goat or sheep to cow dairy.

Keto Carrot Cake

Ingredients

Goat Cheese Frosting

  • 8 oz goat cheese softened
  • 1 tsp vanilla
  • 59 grams mayonnaise about 1/4 cup
  • 59 grams coconut milk about 1/4 cup
  • 35 grams xylitol (powdered) any sweetener

Carrot Cake

  • 6 eggs separated
  • 62 grams xylitol
  • 30 grams egg white powder
  • 1 tsp gelatin
  • 76 grams pork rind flour
  • 52 grams coconut milk about 1/4 cup
  • 103 grams shredded carrot about 1 cup
  • 1 tsp cinnamon
  • pinch salt
  • 1 tsp vanilla
  • 1 tsp pineapple extract
  • 70 grams walnuts optional about 1/2 cup
  • 1/2 tsp baking powder
  • 1/2 tsp baking powder

Instructions

Goat Cheese Frosting

  • Place all ingredients in a mixing bowl
  • Mix with hand mixer until it is a frosting

Carrot Cake

  • In a food processor - process pork rinds to a flour
  • Add xylitol, cinnamon, salt, vanilla, baking powder and baking soda and process
  • Add egg yolks and coconut milk and process
  • In a separate mixing bowl, whip egg whites, egg white powder, and gelatin until a still peak forms
  • Fold the pork rind mixture, shredded carrots, and nuts if using into the egg white mixture until well incorporated
  • Pour batter into 2 8" cake pans or for a fuller cake use just 1 pan
  • Bake at 350 F for 20 minutes
  • Remove from oven and let cool
  • When cool, frost with goat cheese frosting
  • Refrigerate

Notes

For nut free, omit the walnuts

    Hi Judy, I’m guessing the shredded carrot amount is 103 grams rather than ounces (which would be almost 3 kilograms).

      yes, it is grams – thanks for pointing that out.
      It changed the nutritional values by quite a bit – 32 carbs to 4 carbs
