Guacamole

I have always loved guacamole.

When I was doing strict keto (I ma now mostly carnivore), I loved making guac.

In preparation for Super Bowl Sunday, I made us some guac just to make sure I remembered how.

I now remember how good it is and how much I love it.

I dip pork rinds in it and oh boy!  pure heaven!

I like it creamy, so I use my vitamix.

If you like it chuncky, just cut avocado in chunks and combine with all the other ingredients.

Guacamole

Delicious, cream, keto guacamole. No sugar or sweeteners were added to this.

Ingredients

  • 2 avocados
  • 1 clove garlic
  • 1/2 jalapeno more or less to taste
  • 1/2 tsp cumin
  • 1/4 red onion
  • 1 TBS lime juice
  • 1/2 tsp salt
  • 1/4 cup cilantro more or less to taste

Instructions

  • Peel and cube the Avocado.
  • Dice the onion - I used red onion
  • Dice the jalapeno. The amount of jalapeno you will add depends on the size and heat index. Add to the desired heat of your choice.
  • Add all ingredients into blender. I used my Vitamix high speed blender.
  • Blend until smooth.
  • Enjoy with pork rinds, cheese crisps, or peperoni chips

Notes

If you prefer chunky guacamole, just dice everything and mix together

    This is basically the recipe we use except, cilantro is soap to me so we add very little and we used to add sour cream but now leave out. It’s good!
