Dairy Free Keto Banana Pudding

I love a good smooth pudding – I made Dairy Free Chocolate Pudding the other day and I LOVED it, so I decided to try ‘Banana’ pudding.

I had some coconut cream left over from making my Dairy Free Flourless Chocolate Cake  and egg yolks left over from my Cinnamon Bread  so I tried ‘Banana’ Pudding.

It is Dairy Free and clean keto.

I used banana extract for the flavor and it was sooooo good!

Dairy Free Clean Keto 'Banana' Pudding

Creamy and delicious - made with coconut cream and egg yolks.
Perfect way to use up left over egg yolks from your PSMF (Protein Sparing Modified Fast) days.

Ingredients

  • 1 can coconut cream I use Thai Kitchen
  • 6 egg yolks
  • 1 tsp banana extract
  • 4 drops stevia glycinate
  • 3 TBS coconut oil melted

Instructions

  • Combine all ingredients in a blender until well blended
  • In a double boiler or bowl over a pan of hot water, add the blended ingredients
  • Cook on low stirring constantly until the mixture thickens. The pudding will stick to the back of a spoon
  • When thick, pour into a bowl to cool
  • Place in refrigerator until served

Notes

Can be topped with coconut whipped cream.
You can add or detract the extract and sweetener to your liking
