Dairy Free Clean Keto 'Banana' Pudding
Creamy and delicious - made with coconut cream and egg yolks.
Perfect way to use up left over egg yolks from your PSMF (Protein Sparing Modified Fast) days.

Ingredients

can
coconut cream
I use Thai Kitchen

egg yolks
1
tsp
banana extract
4
drops
stevia glycinate
3
TBS
coconut oil melted
Instructions
Combine all ingredients in a blender until well blended
In a double boiler or bowl over a pan of hot water, add the blended ingredients
Cook on low stirring constantly until the mixture thickens. The pudding will stick to the back of a spoon
When thick, pour into a bowl to cool
Place in refrigerator until served
Notes
Can be topped with coconut whipped cream.
You can add or detract the extract and sweetener to your liking
