Blueberry Ice Cream!!!
It is dairy free and absolutely delicious!
I made my basic Dairy Free Keto Ice Cream recipe and added some of my Blueberry Jam.
It is creamy and tastes just like blueberries.
Once stored in the freezer, if it becomes too hard, place in the microwave for 30 seconds max and it will be scoopable.
The only sweeteners that work well with ice cream are allulose and xylitol – yes be careful around your pets with xylitol.

Ingredients
- 15 oz coconut cream 1 can of Thai Kitchen coconut cream
- 6 egg yolks
- 50 grams xylitol allulose may also be used
- 1 tsp vanilla extract
- 1/4 tsp vanilla stevia
- 5 TBS blueberry puree http://ketonaturopath.com/sugar-free-blueberry-jam/
Instructions
- Blend all ingredients except blueberry puree in a high speed blender
- Place mixture in an ice cream maker and process according to manufacturer's recommendations
- When nearly finished freezing, add the blueberry jam
- Process until all the blueberry is incorporated
- Place ice cream in a container and freeze until needed
- If the ice cream is too hard to scoop after freezing, microwave for no more than 30 seconds and it will be scoopable
