I love peanut butter cups so I decided to make a clean keto version.
These are great for Easter, Christmas, or any time.

This clean keto version of Peanut Butter Cups is delicious and great for Easter, Christmas, or any time!

Ingredients
Chocolate
- 169 grams dark chocolate chips I use Bake Believe
- 2 TBS coconut oil
Peanut Butter Filling
- 143 grams sugar free peanut butter 1/2 cup
- 15 grams coconut oil
- liquid stevia
- 15 grams egg white powder
- 1/2 tsp vanilla extract
Instructions
Chocolate
- Melt chocolate chips and coconut oil in a double boiler
- Put a tsp of chocolate on bottom of cupcake liner
- Place in freezer for 10 minutes to harden
Peanut Butter Filling
- Melt coconut oil in a microwave.
- Add all filling ingredients in a mixing bowl and mix well.
- Remove chocolate cup from freezer
- Fill the chocolate cups with the peanut butter mixture leaving room for the top layer of chocolate
- Return to the freezer for 10 minutes
- Rewarm the remaining chocolate over a double boiler or on low heat
- Spread the remaining chocolate over the peanut butter layer
- Chill in refrigerator for about 20 minutes or until the peanut butter cups are set.
Notes
I you do not use chocolate chips, you can use 100% chocolate, 2 teaspoons of coconut oil or cocoa butter
Butter can be substituted for coconut oil in the peanut butter layer.
