Keto Peanut Butter Cups
This clean keto version of Peanut Butter Cups is delicious and great for Easter, Christmas, or any time!

Chocolate
Melt chocolate chips and coconut oil in a double boiler
Put a tsp of chocolate on bottom of cupcake liner
Place in freezer for 10 minutes to harden
Peanut Butter Filling
Melt coconut oil in a microwave.
Add all filling ingredients in a mixing bowl and mix well.
Remove chocolate cup from freezer
Fill the chocolate cups with the peanut butter mixture leaving room for the top layer of chocolate
Return to the freezer for 10 minutes
Rewarm the remaining chocolate over a double boiler or on low heat
Spread the remaining chocolate over the peanut butter layer
Chill in refrigerator for about 20 minutes or until the peanut butter cups are set.
I you do not use chocolate chips, you can use 100% chocolate, 2 teaspoons of coconut oil or cocoa butter
Butter can be substituted for coconut oil in the peanut butter layer.
