Dairy Free Panna Cotta
There was a discussion in our Precision PSMF weekly meeting where people were asking about Panna Cotta so I just had to make a keto version – dairy free too!
This is such an easy dessert to make and tasty too!
It can be made with or without dairy – just substitute heavy cream for the coconut milk.
I chose not to use molds and unmold for serving – instead, I used glasses that could be used to serve it in – much easier too than unmolding!
Dairy Free Keto Panna Cotta
This version of Panna Cotta is clean keto as well as dairy free. Topped with berries, it is a refreshing dessert!

Ingredients
- 13.5 oz coconut milk about 2 cups
- 20 grams xylitol or any keot sweetener - adjust to taste
- 1 tsp vanilla extract
- 2 tsp gelatin
Instructions
- Pour coconut milk in small sauce pan
- Sprinkle the gelatin over the milk
- Let bloom for 5 minutes
- After 5 minutes, whisk the gelatin and coconut milk until the gelatin has dissolved
- Add the sweetener and vanilla extract to the milk mixture
- Heat the milk mixture but do not boil - heat enough to get the gelatin activated and dissolved
- Pour into serving dishes
- Refrigerate for at least 4 hours
- To serve, top with berries
Notes
For a Panna Cotta with dairy, substitute heavy cream for the coconut milk.
I used vanilla flavored Better Stevia instead of the xylitol.
You can use any sweetener you want.
The mixture can be poured into ramekins after heating and unmolded at serving time.
