No Noodle Manicotti
I watched Dr Karl making a wrap with one of my Egg Crepes and Liver Pate – and I had a lightbulb moment.
Manicotti made with the Egg Crepes – no noodles needed!
I am 100% Italian – Sicilian actually – and this was just amazing!!
Tastes better than the ‘real thing’, much less filling.
I made it with slice mozzarella that has no added starches – do not use the pre-shredded cheese because it has starches added so it doesn’t clump. The slice mozzarella is great or you can grate your own – which is not difficult to do.

Ingredients
- 3 ounces ricotta cheese
- 2 ounces mozzarella cheese
- 1/2 egg beaten or use 8 oz ricotta and 1 egg
- 1/2 tsp oregano
- 1/2 tsp garlic powder
- 8 egg crepes
- 6 TBS tomato sauce
Instructions
- Combine the ricotta, egg, oregano, and garlic powder - mix well
- Spoon ricotta mixture onto egg crepe (see my recipe http://ketonaturopath.com/egg-yolk-crepes/ )
- Slice the mozzarella and place on ricotta mixture
- Roll up the egg crepe and place in baking dish
- Repeat until all the mixture has been used
- Top each manicotti with 2 TBS tomato sauce
- Cover baking dish and bake at 350 F for 20 minutes

Judi, I need something clarified please. In your video it sounds like you said 16 oz of ricotta. This printed version says to use 3 oz. The the third item down, it says 1/2 of an egg, or 8 oz of ricotta and 1 egg. Then 6 TBSP of tomato sauce, but in the directions you say to top each manicotti with 2 TBSP. I am not understanding this. Sorry.
I would go by what is written. I sometimes make a different amount while filming on YouTube.
The written recipe has the correct amounts and the macros
Since I have never had manicotti before, so I don’t know what to expect, I think I will increase the tomato sauce to at least 8 TBSP. 6 TBSP does not sound like enough to put on the bottom of the dish (per your video) and add to the tops of 8 crepes, since you say to top each crepe with 2 TBSP. Hope I don’t ruin it. I will add the additional carbs to the count. Thanks.
This looks delicious but I’m a bit confused on some of the ingredients:
The third in the list reads: “1/2 egg beaten or use 8 oz ricotta and 1 egg”
The two don’t seem to be equalivent?

If you are using 3 or 4 oz of ricotta, use 1/2 beaten egg. If you use 8 oz of ricotta, use 1 beaten egg.
