No Noodle Manicotti

Great clean keto, low carb way to enjoy manicotti!
Tastes better than the 'real thing', much less filling.
An amazing alternative for this Italian!

Ingredients

  • 3 ounces ricotta cheese
  • 2 ounces mozzarella cheese
  • 1/2 egg beaten or use 8 oz ricotta and 1 egg
  • 1/2 tsp oregano
  • 1/2 tsp garlic powder
  • 8 egg crepes
  • 6 TBS tomato sauce

Instructions

  • Combine the ricotta, egg, oregano, and garlic powder - mix well
  • Spoon ricotta mixture onto egg crepe (see my recipe http://ketonaturopath.com/egg-yolk-crepes/ )
  • Slice the mozzarella and place on ricotta mixture
  • Roll up the egg crepe and place in baking dish
  • Repeat until all the mixture has been used
  • Top each manicotti with 2 TBS tomato sauce
  • Cover baking dish and bake at 350 F for 20 minutes
