Keto Shortcake

I love strawberry and blueberry shortcake.

I altered my Cinnamon Bread to make it into a shortcake.

I added a teaspoon of vanilla extract and less cinnamon.

Instead of putting in a loaf pan, I spread it out on a parchment paper covered baking pan.

I baked it for 20 minutes in a 325 F oven.

Once cooked, I turned off the heat and left in in the oven for 20 minutes.

Once completely cooled, I cut it into 8 shortbread pieces.

Then I made a Strawberry Shortcake with it.

SOOOO GOOOOD!!

Keto Shortcake

This is a version of my Cinnamon Bread that I made into shortcake.

Ingredients

  • 6 egg whites
  • 27 grams egg white powder
  • 1 tsp gelatin
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 tsp Better Stevia English Toffee

Instructions

  • In a large mixing bowl or stand mixer, combine all ingredients
  • Whip until stiff peaks form.
  • Spread out on a parchment paper lined baking sheet - about 1 inch thick
  • bake at 325 F for 20 minutes
  • Turn off oven and leave in oven for 20 minutes
  • Remove from oven and let cool completely
  • Cut into 8 pieces
