Pumpkin Egg Yolk Waffles

Here is another way to use all the leftover egg yolks from the PSMF breads.

I make both Cinnamon Bread and Garlic Bread a few times a week so I have a LOT of egg yolks!

Add some pumpkin and pumpkin spice  I make my own Pumpkin Pie Spice and I love it.  It is so much better than store bought and it is so easy to make.

You can vary the sweetener to your taste – I use Better Stevia we buy on Wellevate – no bitter taste and some flavoring.

They are perfect for an easy breakfast or a quick snack.

Pumpkin Spice Egg Yolk Waffles

Another great way to use your egg yolks from the PSMF bread!
These waffles are just the right touch of pumpkin and pumpkin spice.
A sweet little fall treat.
They are perfect for an easy breakfast or a quick snack.

Ingredients

  • 6 egg yolks
  • 15 grams bacon fat any fat can be used
  • 1/2 tsp pumpkin pie spice
  • 1/2 tsp baking powder
  • 3 TBS pumpkin
  • 2 drops liquid stevia any sweetener you choose

Instructions

  • Combine all ingredients until well blended
  • Pour batter onto waffle maker - I used a mini waffle maker
  • Cook waffles until eggs are cooked
  • Cool and enjoy!

Notes

I made 5 waffles with the 6 egg yolks.
You can use any sweetener you want.
You can use any fat that you want - bacon, butter, coconut oil, ...
