Pork Rind encrusted Pork Chops

4 boneless pork chops about 1 inch thick
Mayonnaise (I used our home made mayo with our C8Keto MCT Oil)

Pork Rind Flour (instructions here)
1 tsp salt
1 tsp garlic powder
1 tsp ground black pepper

preheat oven to 375 degrees

line baking sheet with parchment paper of aluminum foil
spray rack with coconut oil spray

mix pork rind flour with salt, garlic powder, and pepper.

coat pork chops with mayonnaise
coat with seasoned pork rind flour

place on rack

bake at 375 degrees for 30 minutes.
