Pesto

I make my own pesto since most store bought pesto is made with non-keto ingredients.

In my vitamix (you can use any blender)  I pour in some extra virgin olive oil.

Then I add peeled garlic cloves, salt, and pepper.

Lastly, I add the basil leaves.

I blend until the leaves are all incorporated adding more olive oil if needed.

I do not have exact measurements since it will depend on the amount of basil you use.

You may need more or less olive oil depending on how thick you like your pesto.

I do not use nuts or cheese since we limit both dairy and nuts – but – I prefer pesto this way because the taste of the basil and olive oil are the main attraction.

I use pesto with salmon, cod, and haddock either grilling or baking.

It is sooooo gooood!
