Peanut Butter Cookies

These cookies are so easy to make.

Just 2 ingredients and they are delicious!

I don’t often use nuts or nut butters, but I was wanting some peanut butter so I tried making these cookies.

YUMMY!

I made them without any sweetener, but you could add some – either granular or liquid.

I did add some keto friendly chocolate chips which made these cookies even better!

You can make these with any nut or seed butter if you do not want peanuts.

They can be made with crunchy or creamy nut butter – I used creamy for my first batch.

Easy Keto Peanut Butter Cookies just 2 Ingredients

These amazing peanut butter cookies are keto and so easy to make. There are just 2 ingredients!

Ingredients

  • 8 oz peanut butter no sugar added about 1 cup or 226 grams
  • 1 egg 1 or 2 eggs

Instructions

  • In a mixing bowl, combine the peanut butter and egg
  • Mix well until the egg is completely incorporated
  • Scoop onto parchment paper lines baking sheet with cookie scoop or teaspoon
  • Press down with fork to flatten a bit
  • Bake in 350 F oven for 12 minutes
  • Remove from oven an let cool for 2 minutes
  • Remove cookies to wire rack to completely cool
  • Store in airtight container

Notes

You can add either granular sweeten or liquid sweetener to taste - I don't like anything too sweet so I did not add any sweetener.
You can add chocolate chips.
You can use crunchy or creamy peanut butter.
