Keto Potato Salad with Cauliflower

Another great clean keto side dish for summer cook-outs and BBQs.

This version of ‘potato’ salad has no potatoes and is made with cauliflower.

It is made just like you would make regular potato salad, but uses cooked cauliflower instead of potatoes.

Even non-keto people will love it – it is less filling that potato salad is.

Keto Potato Salad with Cauliflower

This is a great clean keto side dish for you summer gatherings. It is made with cauliflower instead of potatoes so it is not as heavy and filling. Everyone will love it!

Ingredients

  • 12 oz cauliflower heads
  • 120 grams mayo 1/2 cup
  • 2 TBS dill relish
  • 1 TBS apple cider vinegar
  • 25 grams diced onion
  • pinch salt
  • 1 tsp black pepper
  • 2 hard boiled eggs chopped
  • 1 TBS yellow mustard

Instructions

  • Boil cauliflower until tender
  • Drain well
  • Mis all other ingredients in a small bowl
  • Pour over cauliflower and eat warm or refrigerate
