Keto Potato Salad with Cauliflower
This is a great clean keto side dish for you summer gatherings. It is made with cauliflower instead of potatoes so it is not as heavy and filling. Everyone will love it!

- 12 oz cauliflower heads
- 120 grams mayo 1/2 cup
- 2 TBS dill relish
- 1 TBS apple cider vinegar
- 25 grams diced onion
- pinch salt
- 1 tsp black pepper
- 2 hard boiled eggs chopped
- 1 TBS yellow mustard
Boil cauliflower until tender
Drain well
Mis all other ingredients in a small bowl
Pour over cauliflower and eat warm or refrigerate
