Keto Lemon Curd

This clean Keto Lemon Curd is absolutely amazing!

It is a great way to use your left over egg yolks, and we know how nutritious egg yolks are.

It is great eaten plain or used as a spread on keto breads and sweets.

I also like it on cheesecake like my Lemon Meringue Cheesecake!

Keto Lemon Curd

This clean keto lemon curd is absolutely delicious! It is sugar free and is a great way to use your left over egg yolks!

Ingredients

  • 100 grams xylitol or any granular sweetener or liquid stevia
  • 6 egg yolks
  • 150 ml lemon juice about 3/4 cup
  • 6 TBS butter 1/2 cup

Instructions

  • In a small sauce pan, whisk the egg yolks with a wire whisk
  • Whisk in the granular sweetener or liquid stevia until the mixture is light in color
  • Stir in the lemon juice and heat on low stirring constantly with the whisk until the mixture thickens - about 170 F
  • Remove from heat and add the cold, cubed butter and mix until the butter is all melted.
  • Pour mixture into bowl or mason jar - you can strain if there are lumps.
  • The mixture will last 1 week in the refrigerator or it can be frozen.

Notes

Lemon curd is great as a spread on keto breads or sweets.
It is also great on cheesecake like my Lemon Meringue Cheesecake
