Keto Lemon Curd
This clean keto lemon curd is absolutely delicious! It is sugar free and is a great way to use your left over egg yolks!

- 100 grams xylitol or any granular sweetener or liquid stevia
- 6 egg yolks
- 150 ml lemon juice about 3/4 cup
- 6 TBS butter 1/2 cup
In a small sauce pan, whisk the egg yolks with a wire whisk
Whisk in the granular sweetener or liquid stevia until the mixture is light in color
Stir in the lemon juice and heat on low stirring constantly with the whisk until the mixture thickens - about 170 F
Remove from heat and add the cold, cubed butter and mix until the butter is all melted.
Pour mixture into bowl or mason jar - you can strain if there are lumps.
The mixture will last 1 week in the refrigerator or it can be frozen.
