Keto Indian Chicken curry

The spices in the Indian Curry are perfect.

The chicken is not overcooked and the combination of spices, coconut milk, and chicken is amazing.

Keto Indian Chicken Curry

This is just the right combination of spices, coconut milk and chicken to make this perfect!

Ingredients

For the Chicken

  • 2 pounds chicken cubed
  • 1 tsp chili powder
  • 1 tsp salt
  • 1/2 tsp turmeric
  • 2 TBS olive oil

Curry Sauce

  • 1 TBS olive oil
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 2 TBS tomato paste
  • 1.5 TBS curry powder
  • 1 tsp salt
  • 13.5 oz coconut milk 1 can
  • cilantro to taste

Instructions

  • In a zip lock bag or bowl, combine the chicken, chili powder, salt, and turmeric.
  • Coat the chicken pieces
  • In a 4 quart dutch oven or sauce pan, add the olive oil and fry the chicken pieces searing each side for 4-5 minutes. The chicken does not been to be cooked to done since they will cook in the curry sauce also.
  • Remove chicken pieces to a bowl
  • In the same pan, add 1 TBS olive oil, onion, and garlic.
  • Saute until the onion is translucent.
  • Add the tomato paste, curry powder, and salt - saute for a couple of minutes
  • Stir in the coconut milk and bring to simmer
  • Add chicken pieces and simmer for 20 minutes
  • Once the chicken is cooked , top with cilantro.
  • Serve and enjoy!
