This Keto Chocolate Sponge Cake is light and very low carb. It is flourless, nut free, and dairy free. It tastes delicious! Top with your favorite frosting and enjoy!

Ingredients
- 6 eggs separated
- 62 grams xylitol or sweetener of your choice
- 30 grams cocoa powder
- 1 tsp chocolate extract
- 1 tsp vanilla extract
- 1 tsp gelatin
Instructions
- In a medium mixing bowl, whip egg whites to stiff peak
- In a large mixing bowl, beat egg yolks until they become light and pale
- Add sweetener to egg yolks and beat until mixture is light and creamy color
- Add the cocoa powder, chocolate extract, vanilla extract, and gelatin to the egg yolk mixture
- Mix well
- Fold in the egg whites to the egg yolk mixture until well combined
- Pour mixture into 1 or 2 8" cake pans
- Bake at 350 F for 20 minutes or until toothpick comes out clean
- Remove from oven and cool cakes
