- 6 eggs separated
- 62 grams xylitol or sweetener of your choice
- 30 grams cocoa powder
- 1 tsp chocolate extract
- 1 tsp vanilla extract
- 1 tsp gelatin
In a medium mixing bowl, whip egg whites to stiff peak
In a large mixing bowl, beat egg yolks until they become light and pale
Add sweetener to egg yolks and beat until mixture is light and creamy color
Add the cocoa powder, chocolate extract, vanilla extract, and gelatin to the egg yolk mixture
Mix well
Fold in the egg whites to the egg yolk mixture until well combined
Pour mixture into 1 or 2 8" cake pans
Bake at 350 F for 20 minutes or until toothpick comes out clean
Remove from oven and cool cakes
