Keto Chicken Soup

I LOVE chicken soup especially on a cold day.

We don’t have many terribly cold days here in NC, but when we do, I make chicken soup.

I used to make it by boiling a chicken but lately I have been using rotisserie chicken that has no sugar of seed oils.

It is so much easier.

Keto Chicken Soup

This clean keto chicken soup is perect on a cold day!

Ingredients

  • 906 grams cooked chicken 2 rotisserie
  • 143 grams chopped carrot
  • 180 grams chopped celery
  • 82 grams chopped onion
  • water

Instructions

  • Remove all meat from the chicken bones
  • Place bones in large soup pot and cover with water
  • Boil bones for 3-4 hours
  • While bones are cooking, shred chicken, dice carrots, celery, and onion
  • Remove bones from broth
  • Taste broth and add salt and pepper to taste
  • Add vegetables to broth and simmer for 1 hour
  • Add chicken and warm the chicken - maybe 1/2 hour simmering
  • Ladel into bowls and enjoy!
