Keto Banana Chocolate Chip Muffins
I have made these Banana Muffins with and without chocolate chips. They are delicious both ways.
The muffins are light and delicious – made with pork rind flour so they are nut free.
You could also add chopped nuts if you like Banana Nut Muffins.
The plain muffins are only 1 carb per muffin!
Keto Banana Muffins - with or without chocolate chips
These clean keto muffins are very light and are nut free. They are made with pork rind flour instead of nut flours. They can be made plain, with chocolate chips, or with chopped nuts.

Ingredients
- 76 grams pork rinds
- 52 grams coconut milk 1/4 cup
- 100 grams xylitol or sweetener of your choice
- 1 tsp banana extract
- 8 drops liquid stevia
- 1/2 tsp cinnamon
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 15 grams egg white powder
- 4 eggs separated
- 59 grams mayonnaise 1/4 cup
- pinch salt
Instructions
- In a food processor, process pork rinds to flour consistency
- Add baking soda, baking powder, cinnamon, salt, and egg white powder and process
- Add egg yolks, mayo, banana extract, liquid stevia, and xylitol to the food processor and mix well.
- Add the coconut milk to food processor and mix well.
- In a separate bowl, whip egg whites until stiff peaks form.
- Add the pork rind mixture to the egg whites and fold in until thoroughly combines
- At this point, you can add chocolate chips or nuts if you like
- Spoon mixture into muffin tins - makes 12 - muffin tins should be 3/4 fulle
- Bake at 350 F for 25 minutes
- Remove from oven and let cool

I made these and was surprised at the taste since they’re made with pork rinds. The only problem I have with them is that they are dryer then I would like. I will try making the, again to see if they come out better. Thank you for your work in coming up with very low carb recipes.
