In a food processor, process pork rinds to flour consistency
Add baking soda, baking powder, cinnamon, salt, and egg white powder and process
Add egg yolks, mayo, banana extract, liquid stevia, and xylitol to the food processor and mix well.
Add the coconut milk to food processor and mix well.
In a separate bowl, whip egg whites until stiff peaks form.
Add the pork rind mixture to the egg whites and fold in until thoroughly combines
At this point, you can add chocolate chips or nuts if you like
Spoon mixture into muffin tins - makes 12 - muffin tins should be 3/4 fulle
Bake at 350 F for 25 minutes
Remove from oven and let cool
