Keto Banana Muffins - with or without chocolate chips

These clean keto muffins are very light and are nut free. They are made with pork rind flour instead of nut flours. They can be made plain, with chocolate chips, or with chopped nuts.

Ingredients

  • 76 grams pork rinds
  • 52 grams coconut milk 1/4 cup
  • 100 grams xylitol or sweetener of your choice
  • 1 tsp banana extract
  • 8 drops liquid stevia
  • 1/2 tsp cinnamon
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 15 grams egg white powder
  • 4 eggs separated
  • 59 grams mayonnaise 1/4 cup
  • pinch salt

Instructions

  • In a food processor, process pork rinds to flour consistency
  • Add baking soda, baking powder, cinnamon, salt, and egg white powder and process
  • Add egg yolks, mayo, banana extract, liquid stevia, and xylitol to the food processor and mix well.
  • Add the coconut milk to food processor and mix well.
  • In a separate bowl, whip egg whites until stiff peaks form.
  • Add the pork rind mixture to the egg whites and fold in until thoroughly combines
  • At this point, you can add chocolate chips or nuts if you like
  • Spoon mixture into muffin tins - makes 12 - muffin tins should be 3/4 fulle
  • Bake at 350 F for 25 minutes
  • Remove from oven and let cool
