Keto ‘Apple’ Crisp

WOW!  Just WOW!

This Keto ‘Apple’ Crisp is amazing – you will never know there are no apples in it.

It was so good, I can’t wait to make it again!

It is made with sliced zucchini soaked in spiced apple tea with a grain free crisp topping.

This is totally dairy, grain, and nut free, but if you do consume dairy, you can sub butter for the coconut oil.

I used about 2 lbs of zucchini peeled and sliced.  Small zucchini is better than large since there are few of small seeds.

make the apple tea and steep for 5-10 minutes, then boil the zucchini in the tea for 10 minutes.  This cooks the zucchini as well as eliminating the ‘sweat’ during the baking process.

strain the cooked zucchini to remove all the liquid.

Place cooked zucchini in a bowl and add remaining ingredients and mix well.

Place the mixture in a pie plate or an 8 X 8 inch pan.

Mix up the crisp topping and top zucchini with it.

 

Bake and top with Dairy Free Vanilla Ice Cream

Ingredients

'Apple' Filling

  • 2 lbs sliced and peeled zucchini about 6 cups
  • 4 bags Spiced Apple Tea
  • 25 grams xylitol
  • 2 cups boiling water
  • 1/4 tsp xanthan gum
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 3 TBS lemon juice
  • 1/2 tsp stevia glycerine

Crumble Topping

Instructions

Apple Filling

  • Preheat oven to 325 F
  • Boil 2 cups of water
  • Remove the boiled water from the heat and add the 4 apple tea bags
  • Steep tea for 5-10 minutes then remove the tea bags from the water
  • Peel and slice the zucchini in half lengthwize removing the seeds.
  • Slice the halves of zucchini into 1/4 inch slces which are similar to sliced apples
  • Put the sliced zucchini in a pan
  • Pour the tea over the zucchini slices and boil for 10 minutes
  • Drain the cooked zucchini to remove all the water
  • Put drained zucchini in a bowl and add the rest of the filling ingredients (xylitol, stevia glycerine, lemon juice, spices, and xanthan gum)
  • Put zucchini mixture in a pie plate or 8X8 baking pan
  • Top with crumble topping
  • Bake for 20-25 minutes or until the apple mixture is hot and bubbly

Crisp Topping

  • Mix all ingredients in a small bowl
  • Sprinkle topping over zucchini mixture
  • Bake until bubbly

Notes

If you are not dairy free, you can use butter in the crumble topping.
If you are not nut free, you can add chopped pecans or walnuts to the crumble topping.
