Keto Anise Biscotti

When I was younger, I loved a product called Anisette Toast made by Stella Doro.

They were not always available, but when they were, I grabbed a package.

I have made a clean keto version of them – Keto Anise Biscotti and they are amazing.

I have made them with pork rind flour since I do not like to use nut flours and the texture was perfect!

Keto Anise Biscotti - Keto Anisette Toast

This is a keto version of Stella Doro's Anisette Toast

Ingredients

  • 93 grams pork rind flour
  • 2 TBS egg white powder
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp anise extract
  • stevia
  • 1/2 TBS apple cider vinegar
  • 2 tsp coconut milk
  • 2 eggs

Instructions

  • Heat oven to 350 F
  • In a mixing bowl, add dry ingredients and combine
  • Add wet ingredients to the dry ingredients and mix well
  • Line a baking sheet with parchment paper
  • Put mixture on baking sheet and form a log
  • Bake for 25 minutes
  • Remove the sheet pan from the oven
  • Reduce oven temperature to 325 F
  • Slice cookie log into diagonal 1 inch slices
  • place slices cut side up on cookie sheet
  • Bake for 10 minutes
  • Remove from oven and turn cookies over to the other cut side
  • Bake an additional 10 minutes
  • Remove from oven and let cool
  • Enjoy the Anise Biscotti!

Notes

I use vanilla flavored liquid stevia.
Enjoy with a hot cup of coffee!
