Keto Anise Biscotti
When I was younger, I loved a product called Anisette Toast made by Stella Doro.
They were not always available, but when they were, I grabbed a package.
I have made a clean keto version of them – Keto Anise Biscotti and they are amazing.
I have made them with pork rind flour since I do not like to use nut flours and the texture was perfect!
Keto Anise Biscotti - Keto Anisette Toast
This is a keto version of Stella Doro's Anisette Toast

Ingredients
- 93 grams pork rind flour
- 2 TBS egg white powder
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp anise extract
- stevia
- 1/2 TBS apple cider vinegar
- 2 tsp coconut milk
- 2 eggs
Instructions
- Heat oven to 350 F
- In a mixing bowl, add dry ingredients and combine
- Add wet ingredients to the dry ingredients and mix well
- Line a baking sheet with parchment paper
- Put mixture on baking sheet and form a log
- Bake for 25 minutes
- Remove the sheet pan from the oven
- Reduce oven temperature to 325 F
- Slice cookie log into diagonal 1 inch slices
- place slices cut side up on cookie sheet
- Bake for 10 minutes
- Remove from oven and turn cookies over to the other cut side
- Bake an additional 10 minutes
- Remove from oven and let cool
- Enjoy the Anise Biscotti!
Notes
I use vanilla flavored liquid stevia.
Enjoy with a hot cup of coffee!
