Dairy Free Keto Frosting

I wanted to make my Dairy Free Pumpkin Cupcakes and needed a dairy free frosting.

I was going to frost some of them with Dairy Free Chocolate Ganache, but wanted a vanilla frosting as well.

I adapted a recipe from Create Kids Club to make it clean keto.

Dairy Free keto Frosting

I needed a dairy free frosting for my cupcakes so I adapted a recipe to be clean keto - Tastes Great!

Ingredients

  • 100 grams xylitol powdered
  • 103 grams coconut oil 1/2 cup
  • 1 tsp vanilla
  • 1/2 tsp butter flavor
  • 3 TBS coconut milk
  • pinch salt

Instructions

  • In a mixing bowl, whip the coconut oil and extracts for 1-2 minutes until light and fluffy
  • Add the powdered xylitol, coconut milk, and salt and slowly mix until powdered sugar is incorporated
  • Whip on high speed for 2-3 minutes until it is light and fluffy
  • Frost with knife or piping bag

Notes

Store in refrigerator up to 1 week and bring to room temperature before re-using.
Can be forzen.
If the frosting is too thick, add more coconut milk.
If it is too thin, add more powdered sweetener.
Can use any sweetener
