Dairy Free Keto Coffee Pudding
I have made Dairy Free Chocolate Pudding , Banana Pudding, and even made a YouTube Video.
We had a friend suggest a Coffee Pudding – so here is my version of Dairy Free Keto Coffee Pudding.
I used instant decaf coffee since we like to eat this at night and I wanted to be able to sleep.
You can adjust the amount of coffee to your taste – I used 3 Tablespoons.
Dairy Free Keto Coffee Pudding
This Coffee Pudding is dairy free, sugar free, nut free, and clean keto/low carb.It has just the right amount of coffee flavor - not too much, not too little, just right.It is creamy and easy to make - just like regular pudding.Enjoy it with some coconut whipped cream or just as is!

Ingredients
- 2 can coconut milk I use Thai Kitchen
- 6 drops stevia glycerite
- 1 tsp vanilla extract
- 3 TBS instant coffee I used decaf
- 6 egg yolks
- 3 TBS coconut oil melted
Instructions
- Combine all ingredients in a blender
- Blend until well incorporated
- Pour mixture in top of double boiler (or metal bowl over pan of hot water)
- Whisk until the mixture starts to thicken
- When a spoon inserted comes out coated with the mixture - it is most likely done
- Remove from stove and cool
- Refrigerate and enjoy!
Notes
You can adjust the amount of coffee to your liking.
Can be topped with coconut whipped cream
