Creamy, Dairy Free, Keto, Peanut Butter Ice Cream
I usually have quite a few egg yolks leftover from making my Cinnamon Bread and Garlic Rosemary bread ever week.
I use my basic ice cream recipe and convert it to make a peanut butter flavor.
The best sweeteners for Ice Cream is Xylitol and Allulose.
If you have pets, be very careful using Xylitol. I do have pets but I make sure they don’t even lick the empty bowls.
I tried Allulose so I would not have to worry about my pets, but the gastric distress caused by the Allulose was more than I could tolerate.
Creamy, Dairy Free, Peanut Butter Keto Ice Cream
Equipment
- Ice Cream Maker
Ingredients
- 6 egg yolks
- 79 grams xylitol
- 1 cup coconut cream
- 1 cup coconut milk
- 1 tsp vanilla
- 1 tsp other flavored extract maple, chocolate...
- 1/4 cup powdered peanuts
Instructions
- Place all ingredients in a blender
- Blend until peanut powder and xylitol are well mixed
- Start your ice cream maker
- Pour mixture into ice cream maker
- Process according to the directions of you ice cream maker
- When fully processed and the right consistancy
- Pour into container and store in freezer until ready to use
