Carnivore Ravioli
I love ravioli but have not had any for years since I had not determined how to make it keto without a lot of extra dairy.
I came up with a recipe that uses dough made out of eggs only and it tastes great.
If you are keto or ketovore, it tastes great topped with tomato sauce.
For carnivore do not add tomato sauce.
Keto / Carnivore Italian Ravioli
These ravioli are completely carnivore and clean keto when topped with tomato sauce. They are very low carb and nut free too!

Ingredients
Dough
- 3 eggs separated
- 1 TBS egg white powder
- 1/4 tsp gelatin
- 1/4 tsp salt
Ricotta Filling
- 16 oz ricotta
- 1 egg
- 1 tsp garlic powder
- 1 tsp basil
- 1 tsp oregano
Instructions
Dough
- In a medium bowl, whip egg whites, egg white powder, gelatin, and salt with a hand mixer to a stiff peak
- Fold in egg yolks
Ricotta Filling
- Combine all ingredients until mixed well
Assembly
- Place about 1 TBS 'dough' in bottom of muffin tin.
- Place about 1 tsp filling on top of dough
- Cover the filling with dough
- Bake ravioli in 325 F oven for 15 minutes.
- Let cool for about 5-10 minutes
- Top with tomato sauce if not carnivore
Notes
These ravioli can be easily frozen for use later
