These Carnivore Corn Muffins are amazing! They are made with ground chicken so they are nut free, gluten free, and dairy free too!

Ingredients
- 1 lb ground chicken
- 2 tsp gelatin
- 1/2 tsp baking powder
- 1/2 tsp baking sode
- 13 grams egg white powder 2 TBS
- 6 eggs separated
- 1 tsp corn extract
- stevia
Instructions
- In a medium saute pan, cook the ground chicken. Put the chicken in a small food processor and cool
- When the chicken has cooled, add the egg yolk, baking soda, baking powder, and corn extract
Blend the chicken mixture until almost smooth.
- In a large mixing bowl, combine the egg whites, gelatin, egg white powder, and a few drops of liquid stevia.
- With a hand mixer or stand mixer, whip the egg whites to a stiff peak.
- Add the chicken mixture to the whipped egg whites and combine thoroughly.
- Spoon batter into muffin tins
- Bake at 350 F for 30 minutes
- Remove from oven and cool slightly before removing the muffins from the tin
- Enjoy!
