Carnivore Corn Muffins

These Carnivore Corn Muffins are amazing! They are made with ground chicken so they are nut free, gluten free, and dairy free too!

Ingredients

  • 1 lb ground chicken
  • 2 tsp gelatin
  • 1/2 tsp baking powder
  • 1/2 tsp baking sode
  • 13 grams egg white powder 2 TBS
  • 6 eggs separated
  • 1 tsp corn extract
  • stevia

Instructions

  • In a medium saute pan, cook the ground chicken. Put the chicken in a small food processor and cool
  • When the chicken has cooled, add the egg yolk, baking soda, baking powder, and corn extract

Blend the chicken mixture until almost smooth.

  • In a large mixing bowl, combine the egg whites, gelatin, egg white powder, and a few drops of liquid stevia.
  • With a hand mixer or stand mixer, whip the egg whites to a stiff peak.
  • Add the chicken mixture to the whipped egg whites and combine thoroughly.
  • Spoon batter into muffin tins
  • Bake at 350 F for 30 minutes
  • Remove from oven and cool slightly before removing the muffins from the tin
  • Enjoy!
