Carnivore Corn Muffins
These Carnivore Corn Muffins are amazing! They are made with ground chicken so they are nut free, gluten free, and dairy free too!

- 1 lb ground chicken
- 2 tsp gelatin
- 1/2 tsp baking powder
- 1/2 tsp baking sode
- 13 grams egg white powder 2 TBS
- 6 eggs separated
- 1 tsp corn extract
- stevia
In a medium saute pan, cook the ground chicken. Put the chicken in a small food processor and cool
When the chicken has cooled, add the egg yolk, baking soda, baking powder, and corn extract
Blend the chicken mixture until almost smooth.
In a large mixing bowl, combine the egg whites, gelatin, egg white powder, and a few drops of liquid stevia.
With a hand mixer or stand mixer, whip the egg whites to a stiff peak.
Add the chicken mixture to the whipped egg whites and combine thoroughly.
Spoon batter into muffin tins
Bake at 350 F for 30 minutes
Remove from oven and cool slightly before removing the muffins from the tin
